With styling described as plantation elegant and hardwood floors throughout, the Grand Luxury Villa Suite features a large air-conditioned living room with a sofa bed, flat-screen television and other furnishings ensuring the ultimate in comfort. In some rooms, there is even a second half-bath with shower, hand basin, and WC. A new speciality rum bar featuring cutting edge style, a glowing white bar, and comfortable over-sized furniture in a palette of white and soft charcoal, as well as a wide selection of rum. A 'rummelier' is available to help guide guests through their choices. In addition to the offerings behind the bar, The Cane Bar also features a range of tasty dishes to provide the perfect accompaniment to your chosen libation. Enjoy a sashimi or sushi platter featuring the freshest catch of the day, try the slider trio with fish, chicken and beef topped with caramelised onions and organic arugula, or freshly grilled chicken, beef or vegetarian satay served with traditional satay sauce and bok choy kimchi. Dish selections may change according to market availability. This air-conditioned bar is open from 6:00 pm to midnight, seven days a week. Guests must be 18 years and over.
- The Late Night Bar
The Late Night Bar features funky cutting edge style and fantastic artwork. The charcoal walls off-set brightly coloured asymmetric chairs and large white day beds. In addition to the air-conditioned lounge, there is an open-air terrace for cocktails under the stars and in the shadow of the Petit Piton. Open seven nights a week. Guests must be 18 years and over.

Breakfast, lunch and a more casual dinner are served at The Bayside Restaurant & Bar, while lighter fare is served beachside. Daily a la carte breakfast is available from 7:30 am to 10:30 am. Guests can enjoy a wide range of selections from freshly baked pastries to full American breakfast. Lunch is available from noon to 2:30 pm. Try dishes such as the New York Chilli Burger, Vegetarian wrap with Hummus and shiitake mushrooms, or wood oven roast chicken drums with a spicy chipotle sauce. A casual a la carte dinner will be served from 6:30 pm to 10:00 pm. providing a more relaxed alternative to the elegant Great Room. Enjoy dishes such as sauteed striped bass with pearl pasta and tomato essence, whole free range Cornish hen with braised faba beans and shiitake mushrooms, homemade fettuccini with sauteed blue shrimp and oven dried tomatoes, or Chef Cupertino's signature local farm goat birria with black beans, red onions, cilantro and radish. Local entertainment highlighting the culture of St Lucia is also featured on some evenings.
- The Great Room
For discerning diners there is the elegant Great Room, with its old world colonial charm serving Caribbean influenced fare in candlelit, air-conditioned surroundings. Beautifully presented personalised tasting menus are also available nightly reflecting the cultural influences of Jalousie's expert culinary team and utilising the freshest local ingredients. Enjoy dishes such as seared scallops on a puree of Jerusalem artichoke, Kobe beef with a rich red wine jus, or perfectly cooked Mahi-Mahi with green fig mash and tropical salsa. A well-devised wine list ensures the ideal accompaniment for every course. Dress Code is elegantly casual. Shorts, jeans, caps and T-shirts are not allowed. Open from 6:30 pm with the last sitting at 9:30 pm.
