Sipping Elegance: Exploring the Wine Culture at Constance Hotels

Some hotel moments stay with you—not for the grandeur, but for the subtlety. A swirl of scent, a quiet clink of glass, and that one perfect wine that just fits. My recent stays at Constance Belle Mare Plage, Constance Prince Maurice and Constance Tekoma offered more than relaxation; it revealed a quietly sophisticated wine culture that is deeply rooted, yet often overlooked. Though it is not often highlighted, wine is a core thread in the Constance identity—expressed not with grand gestures, but through thoughtful pairings, quietly confident sommeliers, and cellars stocked with treasures.

The Cellar at Constance Prince Maurice: A Curated Sanctuary

Wine Cellar Constance Prince Maurice
The wine journey began in the Wine Cellar at Constance Prince Maurice —an elegant, climate-controlled vault housing over 25,000 bottles from both the Old and New Worlds. The highlight? A tasting led by one of the most passionate sommeliers I have encountered. Trained to the highest standards (we were told he was top of his sommelier class), he walked us through the wine's tearing, the bouquet of aromas, and the story of each vineyard. It did not feel rehearsed. Just thoughtful and real. The cellar can also be booked for private dinners. It offers a unique, calm, and atmospheric setting that will make any evening feel genuinely special.

Le Barachois: Quiet Evenings Over Water

Le Barachois Constance Prince Maurice
That evening, we dined at Le Barachois, a floating restaurant nestled in the mangroves—quiet, still, and gently apart from the world. The sommelier was present but never intrusive, matching each dish with wines that brought out deeper layers of flavour. A white Burgundy with seafood, a spicy Syrah with local spices —every pairing felt natural, almost intuitive.

Constance Belle Mare Plage: A Dynamic destination for wine lovers

Our next stop was Constance Belle Mare Plage, where the wine culture showed a different side—broader in scope, with space for both serious appreciation and more creative pairings.

Spiaggia: Understated Luxury by the Sea

La Spiaggia Constance Belle Mare plage
Another standout experience was at Spiaggia, a refined restaurant with dark wood tones, red accents, and an atmosphere that whispers elegance. Dining here is by reservation only, and the VIP-level service was genuinely something else. Our sommelier was a constant yet discreet presence—guiding wine choices and ensuring each glass was poured with perfect timing. It was a level of luxury and care that is rarely matched. The wine experience here felt deeply ingrained in the restaurant’s DNA, making the dinner feel indulgent yet deeply personal.

Blu Sushi Lounge: Fusion Flavours, Fine Pairings

Blu Sushi Lounge Constance Belle Mare plage
At Blu Sushi Lounge, we explored wine in a different context—paired with Japanese fusion cuisine. The atmosphere was vibrant, the dishes bold, and yet the wines selected felt entirely in sync. A crisp white Burgundy brought out the delicate richness of the sashimi. Once again, it was not about ticking off a wine list—it was about reading the room, picking up on our tastes, and getting it just right.

Blue Penny Cellar: A Temple for the Curious

Though time did not allow me to dine at Blue Penny Cellar, I spent long enough inside to be captivated. The space speaks of quiet refinement—rich wood, sapphire-coloured chairs, soft lighting, and a clear reverence for wine. Housing between 35,000–40,000 bottles from over 2,300 wineries worldwide, the Blue Penny Cellar is not just a restaurant. It is a tribute to the art of wine. Open for dinner only, it specialises in exceptional cuts of meat, artisanal cheeses, and curated flights for those who want to explore.

Rodrigues: A Final Toast at Constance Tekoma

1528 restaurant Constance Tekoma
Only a 1 hour 30-minute flight from Mauritius, we discovered one of Constance’s latest gems: Constance Tekoma. Nestled on the paradise island of Rodrigues, it offered one of the best island escapes I have experienced. The pace was slow, the views sublime, and the air impossibly fresh. Even on these quiet shores, Constance Tekoma held true to the group’s wine-led spirit. At the elevated 1528 Bar & Restaurant, floor-to-ceiling windows opened up to a sweeping view of the sea. As we dined, the sommelier guided us through wine pairings that brought out the soul of Rodrigues’ Creole cuisine. It was a setting—and a pairing—that will not be easily forgotten.

Final Pour

What struck me most was how quietly confident the wine culture was. There is no need to be a seasoned connoisseur—the sommeliers walk beside you, not ahead of you, creating space to learn, taste, and enjoy. By the end of my journey, I found myself understanding more, appreciating more. And loving wine just a little more deeply. A local favourite that stood out was Takamaka—a delicate lychee wine that surprised and delighted. It is these little discoveries that make Constance so quietly exceptional. If you are planning a luxury escape that stirs the senses and deepens your palate, this is where you will want to raise your glass.
